Family Hack of the Week

This Pistachio Loaf from Food Network is a perfect treat for National Pistachio Day on February 26 or anytime you’re cravingsomething special. Serves 12.

Preheat your oven to 350 degrees Fahrenheit. Butter the bottom of an 8.5 x 4.5-inch loaf pan, line with parchment paper, thenbutter and flour the entire pan.

Pulse 1 cup raw, unsalted pistachios with 1/4 cup sugar in a food processor until finely ground. Transfer to a large bowl and whisk in 1 cup all-purpose flour, 1 1/2 teaspoons baking powder, 1/4 teaspoon baking soda, and 1/2 teaspoon salt.

In a separate bowl, beat 10 tablespoons room temperature unsalted butter with 3/4 cup sugar until light and fluffy. Add 3 eggs, one at a time, then mix in 1/2 teaspoon lemon zest. Alternately add the pistachio mixture and 1 cup buttermilk in three additions, mixing just until combined.

Pour the batter into the prepared pan and smooth the top. Bake for 50 to 60 minutes, until a toothpick inserted in the center comes out with a few moist crumbs. Cool in the pan briefly, then remove and let cool completely before topping with 2 tablespoons chopped pistachios and serving.
