Preheat the oven to 350 degrees Fahrenheit. Grease a 9×13-inch cake pan, line it with parchment paper, then grease and flourthe paper.
In a large bowl, cream 1/2 pound (2 sticks) of unsalted butter with 1 1/2 cups of sugar until light and fluffy. Mix in 1 teaspoon vanilla, 2 room-temperature extra-large eggs, and 2 cups creamy peanut butter until smooth.
In a separate bowl, sift together 3 cups all-purpose flour, 1 teaspoon baking powder, and 1 1/2 teaspoons kosher salt. Gradually add to the peanut butter mixture and mix just until combined.
Spread two-thirds of the dough evenly in the pan. Top with 1 1/2 cups rasberry jam or your favorite flavor.
Drop spoonfuls of the remaining dough over the jam and sprinkle with 2/3 cup chopped salted peanuts. Bake for 45 minutes, or until golden brown. Cool completely, then cut into squares.
