Preheat your waffle iron to medium-high. In a large bowl, whisk together 1 3/4 cups all-purpose flour, 2 tablespoons granulated sugar, 1 3/4 teaspoons baking powder, 1/4 teaspoon baking soda and 1/4 teaspoon salt. In a separate medium bowl, whisk together 1 3/4 cups buttermilk, 2 large eggs and 2 teaspoons vanilla.
Pour the buttermilk mixture into the flour mixture and whisk just until a batter forms. Add 1 stick of melted and slightly cooled unsalted butter, whisking until incorporated.
Lightly spray both sides of your waffle iron with non-stick cooking spray. Pour enough batter onto the iron to lightly cover the surface – typically around 1/3 to 3/4 cup, depending on your iron’s size. Close the iron and cook for about 5 minutes, or until the waffle is a deep golden brown and slightly crisp. Repeat with the remaining batter.
Serve immediately with your favorite toppings like butter, syrup, jam or berries.
