Planning a summer road trip or beach day? These homemade granola bars from Food Network are the perfect grab-and-go breakfast or convenient snack to pack along!

Preheat oven to 350 degrees Fahrenheit. Butter an 8×12-inch baking dish and line with parchment paper. Combine 2 cups old-fashioned oats, 1 cup sliced almonds, and 1 cup shredded coconut on a sheet pan. Bake for 10-12 minutes, stirring occasionally, until lightly browned. Transfer toasted mixture to a large bowl and stir in 1/2 cup toasted wheat germ.

Reduce oven to 300 degrees Fahrenheit. In a small saucepan, combine 3 tablespoons unsalted butter, 2/3 cup honey, 1/4 cup lightly packed brown sugar, 1 1/2 teaspoons vanilla, and 1/4 teaspoon kosher salt. Bring to a boil over medium heat, stirring for one minute. Pour hot mixture over oats and add 1/2 cup each of chopped dates, dried apricots, and dried cranberries. Stir thoroughly.

Spread mixture into prepared pan, pressing down evenly. Bake for 25-30 minutes until light golden brown. Allow to cool completely (2-3 hours) before cutting into bars.
