Celebrate National Walnut Day on May 17 with these easy Banana Walnut Muffins, courtesy of Allrecipes.

This recipe makes 12 delicious muffins.

Preheat your oven to 350 degrees Fahrenheit and grease a muffin tin.

In a small bowl, whisk together 1 1/2 cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1 teaspoon cinnamon, 1/2 teaspoon salt, and a pinch of nutmeg. In a large bowl, mash 3 very ripe bananas until smooth, then stir in 1/2 cup sugar, 1/4 cup lightly packed brown sugar, 1/3 cup melted butter, 1 egg, and 1 teaspoon vanilla. Gently fold the dry ingredients into the banana mixture until just combined, then fold in 1/4 cup chopped walnuts.

Divide the batter evenly among the muffin cups and bake for about 20 minutes or until a toothpick inserted in the center comes out clean. Let cool slightly before serving.
