National Ice Cream Sandwich Day is August 2, and there’s no better way to celebrate than with homemade White Chocolate Chunk Cookies from Food Network – perfect for building your own ice cream sandwiches. This recipe makes 20 to 24sandwiches.

Preheat your oven to 350 degrees Fahrenheit. In a large bowl, cream together 1/2 pound of unsalted butter, 1 cup of packed light brown sugar, and 1 cup of granulated sugar until the mixture is light and fluffy. Beat in 2 teaspoons of vanilla and 2 extra-large eggs, one at a time. Stir in 2/3 cup of unsweetened cocoa powder.

In a separate bowl, whisk together 2 cups of flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and 1 teaspoon of kosher salt. Slowly add the dry ingredients to the butter mixture, mixing until just combined. Fold in 1 1/2 pounds of coarsely chopped white chocolate.

Drop spoonfuls of dough onto a parchment-lined baking sheet and bake for 15 minutes. Let the cookies cool on the pan for a few minutes, then transfer them to a wire rack to cool completely.

Once cooled, place a scoop of vanilla ice cream on the flat side of one cookie, top with another, and press gently to form a sandwich. Wrap each one in plastic wrap and freeze for at least 4 hours until set.
